I'm not a big fan of musical theatre in general (those discs in my collection are my wife's, an ex-ballet dancer!) but there are few that come to mind:
The soundtrack to the Buffy The Vampire Slayer episode "Once More, With Feeling"
Most of the tracks on "Rocky Horror Picture Show", esp. the Meat Loaf cut and the track NOT in the film "Sword of Damocles"
Mark's Disney picks are sharp...but I think I'd go with "Over The Rainbow" from the the Wizard of Oz and "Hi-Ho, It's Off to Work We Go" from Snow White...

"Somewhere" West Side Story - Not only the Original Cast and Film Soundtrack versions, but also Tom Waits and Kelly Gray's excellent covers.
"On The Steps Of The Palace" Into The Woods - This one's a bit complicated. I don't think it's the best song in the show, but I know that every time I've seen the show in person, I've developed a tremendous crush on the evening's Cinderella while she sings this. Now THAT'S songwriting!
Okay, make it three. Much as it pains me, because I think Andrew Lloyd Weber is a hack:
"Another Suitcase In Another Hall" Evita - I've always thought this was a lovely, overlooked song. It also holds a fond place in my heart since my dear friend Megan (who loves a dirty martini as much as I love good bourbon) and I have been known to deliver a heartfelt rendition, most notably in an Indianapolis bar during the seventh inning stretch of one of the games of the National League Divisional Playoffs last fall.

I can think of few comedic send-ups of the conventions of American musical theatre that are actually funny. The guys from South Park have made it clear time and again that they have a better handle on those conventions than most people who try to make a legitimate go of it in the genre.
I've not seen Cannibal! The Musical, but if what they've written for South Park over the years is any indication, it should be absolutely great, though perhaps not for Edward Nygma.

I think the writers for the Simpsons do this fairly well also, within the confines of the show. Streetcar! The Musical was awesome ... and there have been a lot of other funny musical theater references as well.

The New York episode, with "Checking In: The Betty Ford Musical" was classic. The Simpsons do it very well. Nice call, KT.
Last season, the IU Department of Theatre & Drama produced A Streetcar Named Desire. Now, I have to confess that a little Tennessee Williams goes a long with me. A very long way. This production, however, was quite well done. When the paperboy arrives to collect from Blanche, though, I could not get Apu's song from Streetcar! out of my head. Leaning forward in my seat, and looking down the row of seats, I was happy to see that I was not alone.
Another great espisode long musical, Simpsoncalifragilisticexpiala-D'oh-cious (aka, the Sherry Bobbins) episode was on TV on Indy this week.

Somebody up there mentioned Cannibal! The musical. It's absolutely hilarious, if your even just a casual fan of South park and their other films, you'd still be in love with it. It's intentionally cheesy, and the songs are ultra-catchy. To give you a taste of what their songs are like...
