We've got a few cover songs threads, but I've been on a Bob Dylan kick lately, and Dylan has to be one of the most covered artists in the history of rock. So covered, I'm thinking he needs his own thread.
Some of the more famous Dylan covers include Jimi Hendrix's "All Along the Watchtower" and Guns N' Roses' "Knockin' on Heaven's Door", but does anyone have some oddball favorites?
Here's a few of mine:
Them - "It's All Over Now, Baby Blue". Van Morrison's old band really does this tune justice. Beck ended up sampling this for his song, "Jack-Ass".
Mike Ness - "Don't Think Twice, It's Alright". Ex-Social Distortion singer turns it into a punkabilly classic.
The Ramones - "My Back Pages". This is really a cover of the Byrds' version, since they also drop a couple of Dylan's verses, but this works incredibly well as a punk tune.

Favorite Dylan song covers I can recall: "You Ain't Goin' Nowhere" by Shawn Colvin, Mary-Chapin Carpenter & Rosanne Cash from the Bob-fest tribute. From I'm Not There: "Just Like A Woman" by Charlotte Gainsbourg & Calexico, and "Goin' To Acapulco" by Jim James & Calexico. George Harrison's take on "If Not for You". The Byrds cover of "My Back Pages". A cool one done surf instrumental by the Surfaris, "All I Really Want To Do". And of course, the White Stripes doing "One More Cup of Coffee".
Best of all, I love Mary Lee's Corvette's worthy cover of Blood on the Tracks in its entirety. Fun audience Dylan impersonations on "Lily, Rosemary And The Jack Of Hearts".
Springsteen doing 'Chimes of Freedom' is essential.
Graham Bonnet's 'It's All Over Now, Baby Blue' is tense and tight as the best pop should be.

I know it was enjoyed some sour criticism, but I really like Sufjan's cover of "Ring them Bells". I wouldn't begin to call it the best Dylan cover ever though.
I have a really cool cover of "Don't Think Twice, It's Alright" by Metric. It's fairly straight forward, but it's my favorite Dylan song in general so I think it's a solid cover.

I really like the Hold Steady's cover of "Can You Please Crawl Out Your Window?" Also from the I'm Not There Soundtrack, Iron & Wine & Calexico's cover of "Dark Eyes."
Fairport Convention also covered Dylan's "I'll Keep It With Mine" on the self titled album on A&M. Also on the Unhalfbricking LP they cover "Percy's Song" and "Million Dollar Bash" as well. Another version of "Percy's Song" appearson the Heyday album. All three of these songs are included on the Fairport Chronicles double LP. For my money Fairport's treatment of "Percy's Song" and "Si Tu Dois Partir" are particularly sublime. Best of all is the traditional song "A Sailor's Life" which runs a bit more than 11 minutes and always seems to end too soon. I could play it repeatedly and still not get tired of hearing it. Fairport's Unhalfbricking is my favorite of theirs, and would be on any short list of desert island essentials.
I distinctly remember the day I bought the Unhalfbricking LP (along with Charley Musselwhite's Stone Blues and Dylan's Great White Wonder) at a local record store. All three remain particular favorites to this day.
