You may be able to say that San Andreas or Halo 2 are the bests games which may be true to some extent if you were comparing games directly. Like, if you had to compare the games with ones from the 80's as if they came out at the same time. But, really it comes down to, what game was better when it came out? Which was a new step in technology itself?

I hereby post my top 3 for each platform I've ever owned in NPC:
PC - Starcraft + Brood Wars, Tribes, Call of Duty N64 - Banjo Tooie, Mario Kart 64, Super Smash Brothers PS1 - Tony Hawk's Pro Skater, Metal Gear Solid, PaRappa the Rapper PS2 - Amplitude, Final Fantasy X, Metal Gear Solid 2 Gamecube - Metroid Prime, Eternal Darkness, Super Smash Bros. Melee Xbox - Halo, Halo 2, Star Wars KOTOR
I know SOMEONE'll wanna protest Halo and Halo 2 being on there, but they're such completely different games, and they both deserve recognition.
War of the Monsters beats acecombat 5 by a cent (for me). Any one who hasn't tried out WOTM should really check into it. The graphics have been out done but the game rocks on.

Bold statement jman. Of course, you may be onto something in that, most people have not tried some of the not-so-publicized games, and they should before making judgement on all of this mainstream stuff. Although its hard not to stay mainstream as far as games go...
I've played war of the monsters and am astounded anyone could nominate it for best game ever. Come on! GTA San Andreas is easily the best, then daylight
I don't see what is so great about GTA's, each game has the same concept and you don't really play through the story. But I would have to say the best games ever are on the PC and are all on Steam, Counterstrike, Day of Defeat, Half-life/2, Deathmatch classic or new one etc...

It's difficult to single out one particular title to be honest, so I'll just say this...
My CURRENT favourite game of all time is Resident Evil 4. I haven't put the bloody thing down since I bought it! The Mercenaries mode has to be the most addictive thing I've ever come across.
I would have to say that people are missing out on counter strike as the best game ever, some of the Final Fantasy's are great especially VII, and I think that Killzone is gerat, but I am waiting on Killzone 2, in my opinion it should be the best of the consoles, maybe not compared to PC though.

the best games on any console are as follows: Resident evil 4, all the metal gear solids, fire emblem/advanced wars (cause there almost the same), morrowind GOTY, The splinter Cells, Zelda Ocarina of Time, Final Fantasy 3,7,9, and 10, the KotoR's, the metroids, I liked fable a lot but I know you probably will disagree..., Half lifes, unreal tournament, and God of war.. maybe (All right I haven't play GOW yet and thats all I can think of at the time.
Have you ever played the game? Its awsome.. just incredible that its possible to push the graphic of a ps2 to such levels while still beating the crap of out dante and making a totally kick-ass game.. I belive that Kratos is the most bad-ass main caracther for a game ever made He would kill dante easily ^^
Best game for xbox: Halo 2 I mean come on! You dont get shooters to be any more sweet then this especially with the xbox live part wich just kicks any online fps ass
Best game for GameCube: The Legend of Zelda: Twilight Princess.

No, seriosuly this is an awsome game and the story and puzzles are gripping and innovative.. The graphics are pure heaven for its time (its still decent) and the soundtrack is like angels singing.. The whole game is a piece of art and a masterwork.. Simply Incredible...
Also I know that many disagree and there are A LOT of good games I didnt even mention as theese are my personal favorites... There still is tons of game wich is pure awsomeness and gets should get a full score from anyone..
