Voted for Grand Turismo...But personally my most anticipated game is MLB 08: The Show...PS3 needs a stand out baseball game and I think they going to pull it off. Love that they added some cool features for real baseball fans like hot and cold streak hitting...And I love that you are going to be able to save the game mid-game.
I gotta go with Resident Evil. Resident Evil is, by far, my favorite series of all time. RE 1-4 were all stellar, near perfect games. I'm playing though RE 3 right now, which is arguable the best of the series.

KAN, you should have let the users choose their own anticipated games as that poll doesn't have all the upcoming star games. (i.e. GTA IV, FF XIII, Haze, etc.) Still though I myself chose Gran Turismo 5.
I voted for MGS4, people are going to be really excited to see what Konami did after filling up a Blu-ray disc. Personally I cant wait for another God of War, my favorite game ever.
