Warcraft II/III
Starcraft
Red Alert 1/2
Worms 2
Civilization 2
The Sims

Hmm.. My favorite PC Games would have to be..

All Blizzard Games-

Mostly Diablo 2, Starcraft, Brood War, and Warcraft 3.

I also liked Disciples 1 and 2.

The Sims

Monkey Islands, specifically 3 and 4.

Quake, Quake 2

Unreal Tournament.

Civilization 3.

Worms

Well, those are the best PC games for me personally, not the most influential ect.

Final Fantasy VII (It's really the best video game ever, and I know it's really a PS game but it did come out on PC too)

Starcraft: Brood War (I agree with E.M. that all Blizzard titles are great)

Tribes 1 & 2 (Best online experiences ever. Beats the hell out of those $10 a month games that are coming out. And I believe both games are being given away for free now. So depressing...)

Grim Fandango (All Tim Schaefer games are brilliant)

Wing Commander: Privateer (Or freelancer if you don't like dated games)

Either age of empires or Return to Castle Wolfenstein. Those were two early games that really started their genres, respectively. Great games, I actually still plauy some AOE from time to time.

Call of Duty - Single Campaign was excellent, and I still play the multiplayer

Far Cry - for beating Doom 3 and Half Life 2 to the next gen FPS.

The Monkey Island series, for nostalgia reasons

GTA 3, 4 and 5 - for the complete freedom to do whatever you want.

Mafia - Fantastic Presentation

Max Payne 1 and 2 - incredibly atmospheric.

Sam and Max Hit the Road... best and still the funniest adventure game ever made. what happened to games driven by story? only half-life 2 comes close...

Looking Glass games put out some great games a few years ago

System Shock 1 & 2
Thief 1 & 2

Fallout would probably but in the runnings for me, as would be many of the early Lucasarts game.

Starcraft- the only time when Blizzard really got it right.

Civ II, Planescape, maybe some others would come pretty close, but Starcraft is IMHO hands-down the best.

Best ever is tough. There are a LOT of great games out there. I'd have to go with, in no particular order:
Everquest series
Baldur's Gate series
Icewind Dale series
Civilization III
The Sims
Knights of the Old Republic

I also loved Final Fantasy VII, but I've only played it on the playstation, so I've no idea how it was on the PC.
