There's a thread on the best beer. I like cheese, so on a similar tip, I would like to ask which is the greatest cheese known to man? I think it is stilton.
Over here we have some really great Mexican cheeses. Asadero is great for quesadillas because it has a stronger flavor and queso blanco (this would be like Monterrey Jack or Mozzarella in terms of similar flavor) is great for everything else.

I bet I could find some good Mexican cheese at the Mexican grocer up the street... good call.
Bleu Cheese is good. I prefer a good feta cheese though. I'm not sure why I feel the two are in direct competition though. I would eat feta on everything.
Another favorite of mine is Munster. It's amazing microwaved just to it's melting point on a Ritz, although I haven't done that since highschool.
My wife was in amish country this summer and picked up some really amazing amish cheeses from Heines Dairy. Sooo good. I doubt there is a cheese I wouldn't like.
