I don;t know if i'm just completely bias towards Quentin Tarantino's films, but I think Death Proof has to be one of best directed car chase sequences in a film.
Pulp Fiction (1994)

I also love the way that Quentin Tarantino shot that car chase. The climax where the crash happens and he shows what happens from each person's point of view is genius and looks sweet. The following films also have some of the best car chase scenes of all time:
The Italian Job (1969) The Blues Brothers The French Connection Ronin Bullitt The Corruptor The Bourne Identity
I have to go with either The Blues Brothers or Bullitt as the best though.

k my bad, but i also loved the replay of the crash, i was a little confused at first but I got it like 3 seconds later, it was gory and great

Ronin's chases are fab. Obviously theres The French Connection and Rendezvous ( not strictly a chase but I cant believe no-one has mentioned it before ). Both however have dubious rumors of their authenticity.
But whilst the the rest of the film sucked donkey ass, Deathproof chases was amazing. All very real, and Zoe Bell is an incredible stunt girl.
And slightly cheating here, but come on you gotta include Duel, surely?
The all-time best car chase scene is in Bullitt-it was the real thing, no stunts or anything
My father was a detective in the SFPD at the time, and helped train Steve McQueen for the movie. McQueen went on a few ridealongs, etc and learned how to be a cop from my Dad and his partner. Had to bring that up.

The Italian Job (2003) Great scene where there going through the subway and the scene with Charlie Croker's blue mini cooper is being cased with the hellicopter and during the scene Charlie hits the hand brake and spins the mini cooper "Classic".
